Instant Pot dump and go recipes are exactly what they sound like: you tip everything into the pot, set it, and walk away. No searing in batches, no standing over the stove — the pressure cooker does the work while you get on with your evening. Here is how to do them properly, plus plenty of ideas to start with.

What Does "Dump and Go" Actually Mean?

The idea is simple: combine raw or minimally prepped ingredients in the inner pot, add liquid, seal the lid and pressure cook. It suits busy weeknights, batch cooking and anyone who finds long recipes intimidating. The trade-off is that you give up the browning and layering of flavour that stovetop cooking gives you — so dump-and-go cooking works best for dishes where everything happily melds together: stews, soups, dals, curries and shredded meats.

The Golden Rules

1. Always add enough thin liquid

A pressure cooker builds steam from liquid, so there must be enough of it at the bottom of the pot. Every model has a minimum — check your manual for the exact amount, and never try to pressure cook with no liquid at all.

2. Layer, don't stir (sometimes)

For tomato-based dishes, put the thin liquid at the bottom and layer tomato products on top without stirring. Tomatoes scorch easily on the base, which can trigger a burn warning and stop the pot from pressurising.

3. Keep dairy and thickeners for after

Milk, cream, yoghurt and coconut milk can split under pressure, and flour or cornflour thicken the liquid so much that the pot struggles to build steam. Pressure cook first, then stir these in on the sauté setting at the end.

4. Don't overfill

Fill the inner pot no more than two-thirds full — and only half full for foods that expand or foam, like lentils, beans and rice. An overfilled pot cannot pressurise safely.

5. Release pressure safely

Let the pot depressurise naturally for meat and foamy foods (just wait), and use a careful quick release for vegetables you want to keep crisp. Always keep hands and face away from the steam vent — treat it with the same respect as a kettle at full boil.
